Ingredients
2 sticks unsalted butter, softened
3 cups all-purpose flour
1 1/2 cups sugar
2 eggs
2 1/2 cups peanut butter
1 1/2 tsp salt
1 tsp baking powder
1 tsp vanilla extract
1 1/2 cups strawberry jam
1 cup salted peanuts, chopped
- In a large bowl, cream together the butter and sugar. Add eggs, peanut butter, and vanilla extract.
- In a separate bowl, whisk together the flour, salt, and baking powder. Gradually add to butter mixture.
- Spread two-thirds of the batter in a 9 by 13 inch lined pan. Spread jam. Crumble the rest of the peanut butter batter on top. Sprinkle on chopped peanuts. Bake at 350 degrees for 45-60 minutes. Let cool. Cut in to 3 by 2 inch pieces. Serve as desired.
