Mini Chocolate Pie

Ingredients

For the Dough:

2 1/2 cups all-purpose flour
1 tsp salt
1 tsp sugar
2 sticks unsalted butter, cut
1/4 to 1/2 cup ice water

For the Ganache:

2 cups chocolate
1 cup heavy cream
1 tbsp butter


  1. In a food processor combine the flour, salt, and sugar. Add butter. Slowly add the ice water until crumbly. Divide dough in two and shape into disks. Wrap and chill for at least 1 hour.
  2. On a double broiler, combine the heavy cream, chocolate, and butter. Once melted, chill until thick and room temperature.
  3. On a floured surface, roll out dough 1/8 inch thick. Cut out pieces of dough in circles. Place in greased cupcake pan. Bake at 350 degrees for 12 minutes or until golden brown. Let cool.
  4. Place ganache in piping back. Fill pie shells with ganache until full. Chill for at least 1 hour. Serve as desired.
