Snickerdoodle Cupcakes

Ingredients

1 1/2 cups all-purpose flour
1 1/2 cups cake flour
1 tbsp baking powder
1/2 tsp salt
1 tbsp ground cinnamon
1 cup unsalted butter, softened


  1. In a medium-large bowl sift together the salt, baking powder, both flours, and cinnamon.
  2. Cream together the sugar and butter on medium-high speed until fluffy. Add eggs and vanilla. On low speed, alternate adding the milk and dry ingredients.
  3. Divide batter into cupcake liners. Bake at 350 degrees for 20 minutes. Let cool.

Notes

Add eggs slowly to ensure the butter does not get too cold.
