Ingredients
3 bananas
2 cups cake flour
1/2 tsp baking soda
1/2 tsp baking powder
3/4 tsp salt
1 stick unsalted butter, softened
3/4 cup sugar
3 eggs, separated
1 tsp vanilla
1/2 cup sour cream
- Place bananas on a lined baking sheet. Bake at 400 degrees for 15 minutes. Let cool.
- In a large bowl, whisk together the flour, baking soda, baking powder, and salt.
- Ina separate bowl, cream together the butter and sugar. Add egg yolks and vanilla. Add bananas. Alternate adding the sour cream and dry ingredients.
- Divide batter between a lined cupcake tray. Fill each cupcake 3/4 of the way full with batter. Bake at 350 degrees for 20 minutes. Let cool. Serve as desired.
