Roasted Banana Cupcakes

Ingredients

3 bananas
2 cups cake flour
1/2 tsp baking soda
1/2 tsp baking powder
3/4 tsp salt
1 stick unsalted butter, softened
3/4 cup sugar
3 eggs, separated
1 tsp vanilla
1/2 cup sour cream


  1. Place bananas on a lined baking sheet. Bake at 400 degrees for 15 minutes. Let cool.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. Ina separate bowl, cream together the butter and sugar. Add egg yolks and vanilla. Add bananas. Alternate adding the sour cream and dry ingredients.
  4. Divide batter between a lined cupcake tray. Fill each cupcake 3/4 of the way full with batter. Bake at 350 degrees for 20 minutes. Let cool. Serve as desired.
