Red Velvet Cupcakes

Ingredients

2 1/2 cups cake flour
2 tbsp cocoa powder
1 tsp salt
1 1/2 cups sugar
1 1/2 cups canola oil
2 eggs
1/2 tsp red gel food coloring (optional)
1 tsp vanilla extract
1 cup buttermilk
1 1/2 tsp baking soda
2 tsp white vinegar


  1. In a large bowl whisk together the flour, cocoa powder, and salt.
  2. In a separate bowl, beat the sugar and oil. Add eggs, vanilla, and food coloring. Alternate adding the dry ingredients and buttermilk. In a bowl mix the baking soda and vinegar. Add to mixture.
  3. Divide batter between lined cupcake pans. Fill 3/4 of the way full. Bake at 350 degrees for 20 minutes. Let cool. Decorate as desired.

Notes

Mix sugar and oil on low speed to ensure it doesn’t splatter everywhere.
