Lemon Lime Cupcakes

Ingredients

3 1/3 cups all-purpose flour
1 tsp baking powder
4 stick unsalted butter, softened
2 tsp salt
2 cups sugar
1 tsp vanilla extract
9 eggs
3 tbsp lemon zest
3 tbsp lime zest
1/4 cup lime juice
1/4 cup lemon juice


  1. In a large bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a separate bowl, cream together the butter and sugar. Add vanilla, eggs, and zest. Alternate adding the juice and dry ingredients.
  3. Divide batter into cupcake liners, filling 3/4 of the way full. Bake at 325 for 20 minutes. Let cool. Frost with Royal Icing. Top with zest. Serve as desired.
