Confetti Cupcakes

Ingredients

1 3/4 cake flour
3/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 unsalted butter, softened
1 cup sugar
2 egg whites
2 tsp vanilla extract
1/2 cup sour cream
1/2 cup whole milk
1/2 rainbow sprinkles


  1. In a large bowl whisk together salt, baking powder, baking soda, and cake flour.
  2. On high speed, beat sugar and butter together until pale and fluffy. Add vanilla extract and egg whites. Add sour cream and mix until combined.
  3. Beat in dry ingredients on low speed until incorporated. Add whole milk. Take off mixer and gently fold in the rainbow sprinkles. Divide batter in cupcake liners. Bake at 350 degrees for 19-22 minutes. Let cool.

Notes

Make sure to fill your cupcake liner 2/3 of the way full with batter to ensure that they don’t overflow in the oven.
