Carrot Cake

Ingredients

1 pound shredded carrots
2 1/2 cups all-purpose flour
2 tsp baking soda
2 tsp baking powder
1 1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp ginger
1/2 tsp all-spice
3/4 cup sour cream
3/4 cup vegetable oil
1/2 cup apple sauce
1 2/3 cup sugar
2 tsp vanilla extract
3 eggs


  1. In a large bowl sift together the flour, baking soda, baking powder, salt, cinnamon, ginger, and all-spice. Whisk together until combine.
  2. In a separate bowl whisk together the sour cream, veritable oil, apple sauce, sugar, vanilla extract, and eggs.
  3. Slowly mix together the wet and dry ingredients. Fold in carrots. Divide between 3 8 inch greased cake pans. Bake at 350 degrees for 40-45 minutes. Let cool.

Notes

You want to fold in the carrots to ensure they don’t break up into small pieces.
